A gas fryer with two independent 7 litre tanks heats cooking oil by direct flame beneath seamless stainless steel vats. The burners transfer energy into the oil, raising its temperature quickly and evenly across the entire volume. A thermostatic control system monitors the oil and cycles the burners on and off to hold the set point, while a separate safety thermostat cuts the gas supply if the temperature rises beyond safe limits. To start, the operator fills each tank with oil to the marked level, then lights the pilot flame with the piezoelectric igniter.
