A gas grill heats a solid cooking plate from below with controlled gas flames, transferring heat directly into the food. The thick metal plate holds the temperature evenly across its surface, so meats, vegetables and other items cook at a steady rate without hot spots. The chrome finish on the plate reflects radiant heat back into the food, reducing the energy needed to maintain the set temperature and keeping the kitchen cooler. Because the chrome surface is non-porous, it does not absorb flavours or grease, so the same plate can cook different foods in succession without cross-contamination or the need for cleaning between batches.
The operator lights the grill, sets the flame level on each burner and waits for the plate to reach the desired temperature. Food is placed directly on the plate, turned as needed and removed when done. A removable stainless steel basin under the front edge catches grease and juices, preventing flare-ups and making it easier to dispose of waste. When the service is finished, the basin is lifted out, emptied and washed separately.
The cooking plate is 15 mm thick smooth steel with rounded front corners and a polished or solid chrome finish. A 1 mm worktop of AISI 18/10 stainless steel surrounds the plate, providing a durable, corrosion-resistant surface that aligns precisely with adjacent equipment. The grease basin holds up to 2 litres and is made of the same stainless steel as the worktop. Two independent gas burners, each rated at 5.5 kW, sit beneath the plate, allowing different temperature zones on the 70 cm-wide surface.
The 11 kW gas load requires a dedicated commercial gas line and adequate ventilation. The 700 mm width fits standard worktop runs, while the 714 mm depth and 850 mm height allow comfortable reach across the plate without overhanging adjacent units. At 97 kg, the grill is heavy enough to stay stable on the worktop but can still be moved with a trolley or two people.
Cleaning involves wiping the chrome plate with a damp cloth once it has cooled, removing the grease basin for washing and scrubbing the worktop with a non-abrasive cleaner. The independent burners let one side cool while the other remains in use, so cleaning can be done in stages without shutting down the entire grill.
The MAGISTRA PLUS 700 is a 70 cm gas grill in the MBM professional catering range.
