A gas stove transfers energy directly from the flame to the pan, eliminating the delay of an electric element. The burner heats the base of the cookware evenly, allowing rapid temperature changes and immediate response to adjustments. This direct heat control is essential for techniques that require quick searing, simmering or boiling, and it reduces energy waste once the target temperature is reached.

The MAGISTRA PLUS 700 operates with Flex Burners that stabilise the flame automatically, preventing fluctuations caused by gas pressure or draughts. Each burner adjusts from a gentle simmer to a full boil, giving the chef precise command over every pan. The pilot flame is shielded inside the main burner, reducing the risk of accidental extinguishing and ensuring safe ignition every time. Burners are spaced to accommodate pans up to 40 cm across, so large stockpots or multiple smaller pans can be used at once.

To start cooking, the operator opens the gas valve, ignites the pilot and sets the desired power level on the control knob. The flame adjusts instantly, and the pan support holds the cookware steady. Once cooking is complete, the knob is turned off, the flame extinguishes, and the pan is removed. The worktop remains hot for a short period, so caution is needed until it cools.

The stove is built on a 1 mm thick worktop of AISI 18/10 stainless steel, a grade chosen for its resistance to corrosion and staining. The single-piece cast iron pan supports are sized to fit commercial dishwashers, simplifying cleaning. Brass burner caps resist oxidation and conduct heat efficiently, while the self-stabilising flame design reduces the need for frequent adjustments during service.

Controls consist of individual knobs for each burner, allowing independent power settings. The knob adjusts the gas flow continuously, so the flame can be fine-tuned for delicate sauces or high-heat frying.

A total power rating of 33 kW indicates the stove draws a significant gas load, requiring a dedicated supply line sized for professional catering equipment. The 1100 mm width provides ample space for multiple pans, while the 850 mm height aligns with standard worktop heights for comfortable use. At 88 kg, the stove is heavy enough to remain stable during vigorous cooking but can still be moved with a trolley or two people.

Cleaning involves removing the pan supports and burner caps, which are dishwasher-safe. The stainless steel worktop can be wiped down with a damp cloth and mild detergent, while the burners themselves are brushed to clear any food debris. The protected pilot flame reduces carbon build-up, so maintenance is less frequent than with exposed designs.
