A professional electric pasta cooker heats two separate vats of water to a rolling boil, allowing kitchen staff to cook different pasta shapes or batches simultaneously without flavour transfer. Electric elements submerged beneath the water raise its temperature rapidly; the large surface area of the vats ensures even heat distribution and prevents localised overheating. Once the water reaches the set temperature, the elements cycle on and off to maintain a steady boil, while the operator lowers perforated baskets filled with pasta into the vats. The perforations let the water circulate freely around each strand or piece, cooking it evenly and preventing clumping. When the pasta is al dente, the baskets are lifted clear of the water, draining it back into the vat for reuse or disposal.
The sequence begins by filling each 40 litre tank with cold water via the electric valve, which opens and closes at the press of a button. The operator then sets the four-position power switch for each vat independently, choosing the intensity of the boil according to the pasta type and volume. Once the water reaches the operating temperature, the safety thermostat cuts power if the temperature exceeds a safe limit, while the operating thermostat maintains the boil. Pasta is lowered into the water in the baskets, and the timer is started. After the required cooking time, the baskets are removed, drained, and the pasta is tipped onto a worktop or into a holding container. The water can be kept hot for the next batch or drained through the same electric valve.
The construction is entirely in stainless steel, with the two vats moulded in AISI 316 anti-corrosion grade for resistance to salt and acid. Rounded corners inside the vats eliminate crevices where food particles could lodge, simplifying cleaning. The 1 mm worktop is in AISI 18/10 stainless steel, providing a durable surface for draining and portioning. Optional pasta baskets, also in AISI 304 18/10 stainless steel, come with thermal handles to protect staff from burns.
Each vat draws 13.3 kW, requiring a 400 V three-phase supply with neutral and earth. This high power rating reflects the need to bring 40 litres of water to the boil quickly, even when starting from cold, and to recover temperature rapidly after a batch of cold pasta is added.
