A gas stove transfers energy directly from the flame to the pan base, eliminating the lag of electric elements. The MAGISTRA PLUS 900 uses Flex Burners that adjust the gas flow to maintain a steady flame across a wide power range. This lets the chef move from a gentle simmer to a rolling boil without changing burners or waiting for heat to build. The flame stabilises itself against draughts and gas-pressure fluctuations, so the power stays consistent once set.
To start, the operator places a pan on the cast-iron support, lights the pilot flame protected inside the main burner, then turns the control knob to the desired setting. Each burner can be adjusted independently, allowing different pans to cook at different intensities at the same time. The supports are sized to fit inside a commercial dishwasher, and the 40 cm clearance between burners accommodates large stock pots or multiple smaller pans.
The stove is built on a 1 mm worktop of AISI 18/10 stainless steel, a grade chosen for resistance to corrosion and staining in a busy kitchen. Brass burner caps conduct heat evenly and resist oxidation, reducing maintenance. The worktop is joined with aligned seams to prevent food or liquid from seeping underneath.
Controls consist of individual knobs for each burner, each marked with power settings from minimum to maximum. The 22 kW total power rating indicates the load on the gas supply; in practice, this means the stove can sustain high-output cooking across all burners simultaneously without pressure drop.
The 700 mm depth, 900 mm width and 850 mm height define the footprint and clearance needed on the worktop. At 74 kg, the stove is heavy enough to stay stable during vigorous stirring but can still be moved by two people using a trolley.
Cleaning involves removing the dishwasher-safe cast-iron supports, wiping the stainless steel surface with a damp cloth, and brushing the brass caps to prevent carbon build-up. The self-stabilising flame reduces the need for frequent re-adjustment, and the protected pilot flame minimises the risk of accidental extinguishing during cleaning.
