A gas fryer heats cooking oil by burning gas beneath a stainless steel tank. The burner produces a horizontal flame that transfers heat evenly through the tank walls, raising the oil to frying temperature quickly and maintaining it within tight limits. A thermostatic control monitors the oil and adjusts the gas flow automatically, while a safety thermostat cuts the supply if the temperature exceeds safe levels. The method gives fast recovery after food is added, so batches cook in consistent time without cooling the oil between loads.
To operate, fill the tank with oil to the marked level, then ignite the pilot flame with the piezoelectric device. Set the desired temperature on the thermostatic control and wait for the oil to reach it. Lower the basket into the oil, load it with food, and start the timer. When the food is done, lift the basket, let the oil drain back into the tank, and remove the food. A large front drainer catches any drips, and a stainless steel filter in the oil collection tank keeps debris out of the used oil.
The fryer is built from 18/10 AISI 304 stainless steel, with moulded, continuous-welded tanks that have rounded corners for easy cleaning. A 1 mm worktop of the same material provides a durable surface around the tank. The gas burner is stainless steel with a safety valve and thermocouple, and the ignition system includes a pilot flame for reliable lighting.
Controls consist of a thermostatic temperature control to set the oil temperature and a safety thermostat that overrides it if the oil overheats. The piezoelectric ignition button lights the pilot flame, and the gas valve is controlled automatically by the thermostat.
