This gas fryer features two separate 9 litre vats, each heated by a high-output stainless-steel burner positioned beneath the tank. The burners produce a horizontal flame that warms the oil rapidly and uniformly. A safety valve and thermocouple oversee the gas flow, cutting it off if the flame extinguishes, while a pilot flame and piezoelectric ignition provide reliable lighting. Thermostatic control maintains the oil temperature, adjusting the burner output to avoid overheating and ensure consistent frying results.
Food is placed in baskets and lowered into the hot oil, where it cooks quickly. A safety thermostat interrupts the gas supply if the oil temperature rises beyond safe levels, safeguarding the appliance and the oil. After cooking, the baskets are lifted, drained over the vats, and the food transferred to a work surface. A large front drainer captures excess oil, channelling it back into the vat or into a collection tank equipped with a stainless-steel filter for straightforward disposal.
Constructed from 18/10 AISI 304 stainless steel, the fryer has moulded, continuous-welded tanks with rounded corners to simplify cleaning. A 1 mm thick stainless-steel worktop offers a sturdy area for food preparation and basket handling. The burners, safety valve, thermocouple, pilot flame, and piezoelectric ignition are all located beneath the tanks, shielded from spills but accessible for maintenance.
Each vat includes its own thermostatic temperature control, enabling different frying programmes to operate at the same time. The safety thermostat acts independently, overriding the controls if the oil becomes too hot. A straightforward oil outlet system with a stainless-steel filter simplifies draining and filtering, reducing waste and prolonging oil usability.
The fryer's 2×7.5 kW gas burners require a stable gas supply. Weighing 55 kg, it should be moved using castors or a trolley. Its 700×714×580 mm dimensions suit most professional worktops, leaving room for baskets and oil containers. The twin 9 litre capacity allows simultaneous frying of different foods or larger batches of the same item without flavour transfer.
Cleaning involves draining the oil through the front outlet, removing the baskets, and wiping the worktop and tanks. The rounded corners and continuous welds prevent debris from accumulating. Burners are tilted for access, and the stainless-steel filter in the oil collection tank is rinsed separately. The 1 mm worktop is cleaned with a damp cloth and sanitised after use.
