Professional baking mix for original Belgian waffles
A traditional Brussels waffle mix that delivers the signature texture of the Belgian original: a shatteringly crisp exterior and a light, airy interior. The recipe has been standardised for professional kitchens, removing the need for eggs, milk or butter. Only water is added to the dry mix, so each batch can be prepared quickly without measuring fresh ingredients or cleaning extra utensils.
The operating principle is straightforward. The dry blend contains pre-mixed flour, sugar, leavening agents and flavourings. When water is added, the leavening agents activate, creating carbon dioxide that expands during baking. The heat of the waffle iron sets the structure, trapping the gas inside the batter to produce the characteristic open, fluffy crumb. At the same time, the high surface temperature of the iron caramelises the sugars on the outside, giving the waffle its deep golden colour and brittle snap.
To use, weigh 1 kg of mix into a mixing bowl. Add 1.5 litres of cold water and stir until smooth. Let the batter rest for a few minutes to allow the leavening agents to begin working. Ladle the batter onto a pre-heated, greased waffle iron and bake until the waffle is uniformly golden and crisp. The finished waffle lifts away cleanly, ready to be served or held in a warming cupboard.
The mix is supplied in a single 10 kg bag, which yields approximately 225 Brussels waffles. Each waffle is consistent in size, colour and texture, reducing waste and ensuring every portion meets the same standard.
Because no fresh ingredients are required, storage is simple. Keep the unopened bag in a cool, dry cupboard away from strong odours. Once opened, transfer any unused mix to an airtight container to preserve freshness and prevent contamination.
The 10 kg weight is chosen for medium to large operations. It allows a full service to be run from a single bag without frequent stock checks, while still being light enough to be moved by one person and stored on a standard shelf.
