A chocolate melter maintains a low, even heat across a water bath so that couverture and compound chocolate melt without scorching or seizing. The heating element warms the water, which in turn transfers heat to the chocolate-holding pan above. Because water conducts heat more gently than direct contact with an element, the chocolate stays at a stable temperature and keeps its gloss and temper, ready for dipping, moulding or enrobing.
The operator slides a GN2/3 gastronorm pan filled with chocolate blocks or drops into the melter's water bath. Once the pan is seated, the thermostat is set to the required holding temperature and the unit is switched on. The water heats gradually, warming the chocolate from below. A clear lid can be placed over the pan to reduce evaporation and keep dust out while the chocolate melts. When the chocolate reaches the correct consistency, the pan is lifted out and transferred to the worktop for use.
The melter is built as a shallow stainless-steel water bath with a single heating element beneath. The interior is sized to accept a standard GN2/3 pan 100 mm deep, and the exterior footprint of 435 × 385 mm fits neatly on a worktop or shelf. A power rating of 0.2 kW keeps the electrical load light, suitable for a standard 230 V single-phase circuit. The 6 kg weight allows the unit to be moved by one person when empty, while the 9 litre water capacity provides enough thermal mass to hold temperature without constant cycling of the element.
Controls consist of a simple on-off switch and an adjustable thermostat that sets the water temperature. The thermostat dial is marked in degrees Celsius, allowing the operator to match the setting to the chocolate's recommended melting point.
Cleaning involves draining the water bath after each use, wiping the interior with a damp cloth to remove any chocolate residue, and drying the unit before storage. The stainless-steel construction resists corrosion from water and chocolate acids, and the low power rating means the element can be left to cool quickly between uses.
