A lemon cutter slices whole citrus fruit into uniform wedges or rings without crushing the flesh or losing juice. The fruit rests on a grid of stainless steel blades arranged in a cross or radial pattern. When the operator presses the hinged lid down, the blades cut through the fruit in one motion, separating it into equal portions. This method preserves the shape and juice content better than a knife, and the consistent size speeds up garnishing and plating in volume service.
To use the cutter, place a whole lemon on the blade grid. Close the lid firmly until it locks; the blades slice the fruit cleanly. Lift the lid and remove the cut pieces from the grid. The process takes seconds per fruit, and the same motion works for limes, small oranges and other citrus of similar diameter.
The Neumarker L05-90279 lemon cutter is built from stainless steel for corrosion resistance and easy cleaning. The base measures 385 mm by 400 mm, fitting on a standard worktop without crowding adjacent prep areas. The unit weighs 2.1 kg, light enough to move between stations but stable during use.
Cleaning follows directly from the construction: the stainless steel surfaces and blade grid are wiped down after each service, and the hinged lid lifts off for thorough rinsing. No lubrication or disassembly is required.
The cutter is listed in the Neumarker catalogue under Small Prep Equipment, Citrus Tools.
