To use the cutter, place a block of mozzarella or a tomato on the base. Slide the pusher forward, pressing the food against the blade. The grinded teeth cut cleanly, and the slice drops into a gastronorm container positioned beneath the elevated frame. When the container reaches the desired depth of 65 mm, it can be swapped without stopping work.
The cutter is built from stainless steel for corrosion resistance and hygiene. The frame and guide rails form a rigid structure that prevents flexing during use. Interchangeable blades allow quick replacement when edges dull, and the entire unit is dishwasher-suitable for daily cleaning.
