Novameta bakery-tray trolley for 16 standard 600×400 mm trays

A mobile rack that organises sixteen standard 600×400 mm bakery trays into a single vertical stack, letting a kitchen move large batches of dough, pastries or baked goods between workstations without handling each tray individually.

The trolley's shelves are spaced to match the tray height, so the weight of each tray rests directly on the shelf below. This stacking method keeps the trays level and prevents sagging or spillage during transport. Because the entire stack moves as one unit, a single operator can wheel the trolley from the proofing cabinet to the oven, from the oven to the cooling area, or from the cooling area to the packing station without lifting or rearranging trays.

To use the trolley, the operator slides each tray into its designated shelf slot. Once all sixteen trays are loaded, the trolley is wheeled to the next station. At the destination, the trays are removed in the same order, either by hand or with a tray-lifting tool. The fixed shelf spacing ensures that trays do not shift or tilt while the trolley is in motion, so the contents remain secure throughout the journey.

The frame is constructed from stainless steel, chosen for its resistance to corrosion and ease of cleaning in a professional kitchen environment. The shelves are also stainless steel, providing a smooth, durable surface that supports the trays without warping or bending under repeated use.

The trolley's footprint of 460×600 mm is designed to fit through standard kitchen doorways and alongside workstations without obstructing traffic. Its height of 1707 mm allows it to hold the full complement of trays while remaining stable during movement. The weight of the trolley itself is kept to a minimum to ensure it can be manoeuvred easily when fully loaded.

Cleaning is straightforward: the shelves can be wiped down with a damp cloth and sanitiser after each use, and the frame can be cleaned with a mild detergent solution to remove any residue. Because the trolley has no moving parts or electrical components, maintenance is limited to occasional checks of the wheels and frame for wear.
