A fries dump station holds freshly cooked chips at a steady 60 °C so they stay crisp without overcooking. The unit uses an electric element to maintain the set temperature inside a stainless-steel vat. A thermostat cycles the element on and off, keeping the heat even while the operator adds new batches from the fryer. The warm vat also softens the surface of the chips slightly, letting seasoning stick better before service.
The operator lowers a basket of hot chips into the vat, then shakes or stirs them to spread the heat. A spice shelf above the vat holds shakers or containers of salt, pepper and dry rubs. The operator seasons the chips directly over the vat, catching any excess in the tray below. Tempered glass side panels keep the workspace tidy and protect staff from splashes. When the chips are seasoned, the operator slides them into a fry bag held by the built-in clip, ready for the counter.
The station is built on a stainless-steel frame with four lockable wheels, so it can be moved between the fryer and the service counter. The frame also supports optional cooling counters or heated drawers for a complete chip-service station. A standardised table-height top gives a stable work surface for plating or packaging.
The 930 mm width accommodates a single large vat, leaving room for the spice shelf on the left, right or centre. The 2550 W element draws a steady load on a 230 V single-phase circuit, typical of professional kitchen supplies. The 670 mm height keeps the vat at a comfortable working level, while the 780 mm depth allows space for the bag holder and side covers without crowding the operator.
Cleaning follows the parts in place: the vat and tray lift out for washing, the spice shelf wipes down, and the tempered glass panels remove for cleaning. The wheels and frame are wiped with a damp cloth to remove grease and seasoning dust. Optional side covers and additional shelves are cleaned the same way, with no special tools required.
Variants include a choice of spice-shelf position, single or double side covers, and the option to integrate the station with Novameta cooling counters or heated drawers. The unit is also available as a standalone frame table without the heated vat.
