To use the table, staff position it so the long rollers align with the dishwasher's rack guides. Dirty racks are placed on the far end of the rollers and slide forward as the operator releases them. Clean racks emerging from the machine roll onto the short rollers and are transferred to the grid shelf below, freeing the rollers for the next cycle. The shelf's open grid allows air to circulate, helping items dry faster.
