The principle is simple: a rigid, flat surface gives staff a place to scrape plates, stack trays and organise cutlery before it enters the dishwasher. The sink lets them rinse food debris away under a tap, keeping the wash water cleaner and reducing blockages in the machine. A shelf underneath holds racks of plates or bowls, so the next load is always within arm's reach and the floor stays clear.
To use it, staff scrape plates on the worktop, rinse them in the sink, then slide the racks onto the shelf below. When the dishwasher is free, the racks lift straight from the shelf into the machine, cutting the number of steps between prep and wash.
The frame and worktop are stainless steel, standardised for hygiene and durability in a professional kitchen. The sink is integrated into the worktop, so there are no seams to trap food particles. The shelf below is open, allowing air to circulate and preventing moisture build-up.
