Load the surface evenly up to the 120 kg limit, distributing weight across the full width rather than concentrating it in one spot. The 3300 mm length provides a continuous run for prep work, plating or holding equipment, while the 600 mm depth gives enough room for bowls, trays and small appliances without overhanging.
