A sous-vide core probe measures the exact temperature inside food while it cooks in a temperature-controlled water bath. Unlike surface probes that read the water or the outer layer, a core probe reaches the centre of the item, where the slowest point of cooking occurs. This method relies on the principle that heat transfers steadily from the water through the food until the core matches the bath temperature, ensuring every portion reaches the same doneness without overcooking the edges.
The operator inserts the probe into the thickest part of the food before sealing it in a vacuum pouch. Once the pouch is submerged in the water bath, the probe continuously transmits the core temperature to the sous-vide controller or display unit. The chef monitors the reading until the target temperature is reached and held, confirming the food is cooked evenly throughout. After cooking, the probe is removed and cleaned before the next use.
Construction consists of a stainless-steel needle housing the temperature sensor, connected by a heat-resistant cable to the plug that interfaces with sous-vide equipment. The needle is thin enough to pierce vacuum-sealed pouches without compromising the seal, yet robust enough to withstand repeated insertion into dense proteins and vegetables.
The probe is compatible with sous-vide circulators and water baths that accept external core probes, allowing precise control over low-temperature cooking processes in professional kitchens.
