A professional pizza oven built for high-volume service, the PIZZA GROUP Entry Max accommodates twelve pizzas up to 34 cm in diameter across two independent decks. Each deck heats from above and below, allowing the operator to set separate temperatures for the base and the toppings. This dual-zone control prevents over-browning while ensuring a crisp, evenly baked crust and perfectly melted cheese. The oven circulates radiant heat through the chamber, concentrating energy directly onto the pizza stones rather than wasting it on the surrounding air. A chimney valve regulates airflow, drawing moisture away from the dough and speeding up cooking without drying the pizza out.
To begin service, the operator powers on the oven and sets the top and bottom temperatures for each deck using the mechanical thermostats. Once the chamber reaches the target range—up to 450 °C—the pizzas are launched onto the stones with a peel. The 12 V internal lighting illuminates the entire cooking area, letting the operator monitor colour and rise without opening the door. After the set time, the pizzas slide out ready for slicing and plating. The independent heating zones allow different styles to bake simultaneously: Neapolitan on one deck, Roman on the other, without flavour transfer or temperature drop.
The entire structure is fabricated from stainless steel, chosen for its resistance to high heat and ease of sanitisation. The exterior remains cool to the touch, while the interior surfaces reflect heat back onto the pizzas, reducing energy waste. A single-phase neutral and earth connection on the 400 V three-phase supply ensures stable power draw across all four heating elements, preventing circuit overload in a busy kitchen. At 177 kg, the oven is floor-standing and requires a dedicated space of 1340 mm wide, 920 mm deep and 680 mm high—large enough to handle a full service yet compact enough to fit between a worktop and a refrigerated counter.
Cleaning follows the same simplicity as operation. After the oven cools, the stones lift out for brushing, and the stainless steel interior wipes down with a damp cloth. The chimney valve and thermostats are accessible from the front, so no disassembly is needed for routine maintenance. The Entry Max is supplied as a single unit with no variants or optional extras, ready for immediate installation in any professional kitchen equipped with a 400 V three-phase supply.
