A deck pizza oven bakes pizzas by radiating heat from two separate elements, one above the stone and one below. The stone absorbs the heat and transfers it directly to the base, while the top element browns the cheese and toppings. Independent controls let the operator set a hotter top for a crisp crust or a hotter bottom for a thicker base without changing the cooking time.
The operator slides each pizza onto the stone with a peel, sets the top and bottom temperatures, and watches the bake through the 12 V chamber light. A chimney valve adjusts the draw to keep smoke out of the kitchen. When the cheese is golden and the crust is firm, the pizza is lifted off and the next one goes in.
The oven is built entirely of stainless steel, inside and out. Two 3.65 kW elements—one top, one bottom—heat the chamber to 450 °C. A mechanical thermostat holds the temperature steady once it is set. The 400 V 3-phase supply spreads the load across three live conductors, reducing the current on each and allowing the oven to run on a standard commercial circuit.
The 97 kg weight means the unit is moved on a trolley or lifted by two people. The footprint of 990 mm wide by 1270 mm deep fits a standard worktop or counter, leaving room for a peel and a landing board. The 380 mm height clears most splashbacks and allows the operator to slide pizzas in without stooping.
Cleaning is done with a damp cloth on the stainless steel surfaces and a brush on the stone. The chimney valve is wiped to keep the draw smooth. The 12 V lighting is sealed and does not need maintenance.
