A pizza oven built for two decks of four pizzas each, up to 34 cm in diameter, delivers consistent results across both chambers without rotating trays. The PY M8 from PIZZA GROUP uses Activestone technology to heat the baking surface directly, cutting the time to reach working temperature and reducing energy use while maintaining the high heat needed for Neapolitan-style dough.

The principle relies on a dense stone composite that absorbs and radiates heat evenly. Electric elements above and below each deck transfer energy to the stone, which then conducts it to the pizza base. The top elements brown the toppings while the bottom ones crisp the crust. A fan-free design ensures no air currents disturb the cooking process, and the dual-glass door retains heat without overheating the kitchen.

To operate, the oven is switched on and the desired temperature set between 0 and 450 °C. Once preheated, pizzas are slid onto the stone using a peel. The operator monitors cooking through the glass door, illuminated by internal 12 V lighting. After baking, the pizza is removed, and the stone remains hot for the next load. A controlled chimney valve adjusts airflow to maintain temperature stability, while a stainless steel aspirating hood with a 200 mm outlet vents steam and smoke.

The construction is stainless steel throughout, including the external casing, internal chambers and aspirating hood. The door opens from the bottom up with an ergonomic cool-touch handle, and the unit stands on adjustable feet for levelling on uneven floors.

Controls include a temperature dial for each deck and a main power switch. The 400 V three-phase plus neutral and earth supply powers the 13.2 kW total load, split into four separate circuits for balanced demand. The 183 kg weight requires two people to move and a stable worktop or stand to support it, while the 1130 x 1030 x 720 mm footprint fits into a standard professional kitchen layout.

Cleaning involves wiping the stone after each service to remove flour and food debris, and regular brushing of the aspirating hood to prevent grease build-up. The stainless steel surfaces are wiped down with a damp cloth and mild detergent, avoiding abrasive pads that could scratch the finish.

An optional chamber door that opens from the bottom up is available under article P08PY10085, allowing easier access when the oven is installed at counter height.
