A stainless steel extraction hood draws heat, steam and cooking fumes away from the oven deck and vents them outside the kitchen. A fan inside the hood pulls the hot, humid air through a grease filter, then expels it through a duct connected to the rear outlet. The fan motor runs on a single-phase 230 V supply, matching the circuit used by most professional catering equipment.
The hood mounts directly above compatible ENTRY MAX pizza ovens. Once the duct is connected to the 125–200 mm outlet, the operator switches the fan on and leaves it running while the oven is in use. No temperature or speed settings are required; the fan operates at a fixed rate to maintain steady extraction.
The construction is stainless steel throughout, chosen for its resistance to corrosion and ease of cleaning in a kitchen environment. The unit measures 99 cm wide, 123 cm deep and 15 cm high, giving it a low profile that fits neatly above the oven without intruding into worktop space. At 13 kg, the hood is light enough to be lifted by two people and secured to the oven or a supporting bracket.
A single-phase 230 V supply means the hood can be plugged into a standard 13 A socket or hard-wired to a dedicated circuit, depending on the kitchen's electrical layout. The 125–200 mm outlet diameter allows the duct to be connected with standard fittings, simplifying installation in most commercial kitchens.
Cleaning involves wiping down the stainless steel surfaces and removing the grease filter for washing. The filter traps airborne grease particles, preventing them from entering the ductwork and reducing fire risk. Regular cleaning of the filter ensures consistent airflow and prolongs the life of the fan motor.
