A deck oven heats pizzas from above and below with separate electric elements. The top element radiates heat downward, browning the cheese and toppings, while the bottom element conducts heat through the deck, crisping the base. Independent controls let the operator balance the two sources, so thin or thick doughs cook evenly without burning or under-cooking. The enclosed chamber traps steam released from the dough, keeping the crust soft inside while the surface crisps. To bake, the operator slides each pizza onto a deck, sets the top and bottom temperatures on the mechanical thermostats, and closes the door. A 12 V light inside the chamber lets them watch the bake without opening the door and losing heat. When the timer sounds, the pizza is lifted out with a peel. The oven reaches 450 °C, so it can also roast vegetables, bake flatbreads or finish pre-cooked dishes. The MAX 4 is built entirely of stainless steel, inside and out. The decks are fixed, with no moving parts, so they last through daily service. A chimney valve at the back releases excess steam and smoke, keeping the kitchen air clear. The front door seals tightly to hold heat in, reducing energy use and speeding up recovery between bakes. Two separate 2.8 kW elements give a total connected load of 5.6 kW. The oven runs on 400 V three-phase with neutral and earth, so it needs its own circuit from the distribution board. The 74 kg weight means it can be moved with a sack truck but is stable once in place. The 990 mm width fits a standard worktop run, while the 380 mm height leaves room for a shelf or cupboard above. Stainless steel surfaces wipe clean between lunch and dinner service without trapping grease or flour residue. The stainless steel surfaces resist corrosion and do not absorb food odours. The mechanical thermostats have no electronic parts, so they can be wiped down without risk of damage. The 12 V light is sealed, so it stays bright even when the chamber is steamed.
