A gas gyros maker rotates a vertical skewer of stacked meat above a direct gas flame, exposing every slice to radiant heat and convected hot air. The flame heats the outer layer while the rotation ensures even browning and prevents scorching; fat rendered from the meat drips onto a perforated tray below, keeping the cooking environment clean and reducing flare-ups.
Load the skewer by stacking seasoned meat slices onto the central rod, securing the top plate to hold them in place. The skewer plate, 195 mm in diameter, supports the weight while allowing hot air to circulate around the stack. Once the maximum meat height of 340 mm is reached, close the unit and ignite the gas burner. The skewer turns continuously, exposing each side to the flame in turn. The operator monitors the browning and removes cooked portions as needed, slicing directly from the rotating stack.
The unit is built from stainless steel, including the outer casing, fat tray and perforated sheet. A gas burner rated at 5.25 kW provides the heat source, connected to either LPG (model PG2150) or natural gas (model PG2151). The skewer measures 570 mm in length and is driven by an electric motor housed above the cooking chamber, bringing the total height to 795 mm.
The 5.25 kW gas burner delivers a consistent heat output suitable for a 15 kg meat load, ensuring the stack cooks evenly without overloading the supply. The footprint of 392 mm by 500 mm fits on a standard worktop or mobile stand, leaving space for preparation alongside. The stainless steel construction resists corrosion and withstands daily cleaning with hot water and detergent; the perforated fat tray lifts out for separate washing, preventing grease build-up.
