A gas gyros maker rotates a vertical skewer of stacked meat over a direct gas flame, browning the outer layers evenly while the interior cooks through radiant and conducted heat. The constant turning exposes every surface to the flame in turn, producing the characteristic crisp exterior and juicy centre without manual basting or repositioning.
The operator loads up to 30 kg of seasoned meat onto the 695 mm skewer, stacking it to a maximum height of 470 mm. A perforated fat tray beneath the skewer catches drippings while allowing hot air to circulate. Once the gas supply is connected and the burner lit, the skewer motor turns the load continuously. The 7 kW flame maintains the required temperature, and the operator monitors the browning, adjusting the gas flow if needed. When the meat reaches the desired colour and internal temperature, it is sliced directly from the skewer onto serving plates.
The unit is constructed in stainless steel for corrosion resistance and easy cleaning. A Ø 195 mm skewer plate secures the base of the skewer, and the fat tray slides out for emptying and washing. The overall footprint of 395 mm by 500 mm fits on most commercial worktops, while the 920 mm height allows clearance for the motor assembly above the skewer.
The 7 kW gas burner provides sufficient heat to cook a full 30 kg load without extending service time. The unit is offered in two versions: PG2250 for LPG and PG2251 for natural gas, matching the supply available in the kitchen.
After service, the fat tray and perforated sheet are removed and washed, and the stainless steel surfaces wiped down. The skewer and plate are cleaned separately to prevent fat build-up that could affect rotation.
