An electric gyros knife slices cooked meats into even, thin portions without tearing or crushing. The motor drives a pair of oscillating blades that move in opposite directions, cutting through layers of meat with a scissor-like action. This method preserves the texture and presentation of kebabs, gyros and roasted joints, making it a standard tool in professional rotisseries and catering kitchens.
To operate the POTIS H 7000, the operator fits one of the two 80 mm blades onto the drive shaft, secures the meat block on the work surface, and switches the knife on. The soft-start function gradually brings the blades up to speed, reducing the initial jolt and keeping the cut steady. The patented protection against flooding prevents liquid from entering the motor housing, allowing the knife to work safely near hotplates and grills where fat and juices are released. Once slicing is complete, the knife is switched off and the blades are removed for cleaning.
The unit is built in a compact aluminium housing measuring 125 mm long, 170 mm wide and 190 mm high. The 0.12 kW motor runs on a 230 V single-phase supply, drawing a modest load that fits standard kitchen circuits. At 0.87 kg, the knife is light enough to be held in one hand for extended periods without fatigue, yet sturdy enough to slice through dense meat blocks up to 60 kg in a single service.
Controls are minimal: a single on-off switch starts and stops the motor. The soft-start feature is automatic, requiring no additional setting. Two 80 mm stainless-steel blades are supplied, along with a dedicated sharpener to maintain the cutting edge.
The 230 V voltage matches the standard UK single-phase supply, so the knife plugs directly into a wall socket or a switched spur without special wiring. The 0.12 kW power rating keeps the running cost low and avoids overloading smaller circuits. The 0.87 kg weight allows the operator to move the knife around the worktop freely, while the 125 × 170 × 190 mm footprint leaves ample space for the meat block and a drip tray.
Cleaning is carried out by disassembling the knife: the blades are removed, wiped clean and sharpened, while the housing is wiped with a damp cloth. Running water must never be used on the assembled unit, as this would bypass the flood protection and risk motor damage. The supplied sharpener keeps the blades in cutting condition, reducing the need for professional servicing.
