RoboCream is a modern and convenient innovation in the world of handmade food products. The specialty of the RoboCream line is not only the production of ice cream, but also the preparation of many different mixtures: creams, desserts, sauces, etc.
A pasteurizer that combines heating, cooling and mixing in one vessel prepares custards, creams, sauces and ice-cream bases without separate appliances. The unit heats the mixture to a set pasteurisation temperature, holds it to eliminate pathogens, then cools it rapidly to preserve texture and flavour. A built-in mixer keeps ingredients evenly distributed during both heating and cooling, preventing scorching and ensuring uniform consistency. For frozen desserts, the same vessel can chill the mixture below zero while continuing to agitate it, turning a liquid base into smooth sorbet or soft-serve ice cream without additional freezing equipment.
The operator loads the ingredients into the 40 L stainless-steel bowl, selects one of the pre-set programmes for custard, ganache, béchamel or sorbet, or enters custom parameters for temperature, mixing speed and cycle duration. The machine starts the heating phase, bringing the mixture to the required pasteurisation temperature—high for ice-cream bases, medium for custards, low for delicate sauces. Once the hold time is complete, the cooling phase begins, dropping the temperature to a safe storage level or to the freezing point for sorbets. Throughout the cycle, the mixer runs at intervals or continuously, depending on the programme, to prevent separation and maintain a smooth texture.
Construction is a welded stainless-steel frame with a double-skinned insulated bowl that minimises heat loss during heating and cooling. The control panel is mounted on the front, with a digital display and membrane keypad for selecting programmes and adjusting settings. A single 400 V three-phase supply powers the 4 kW heating element and the refrigeration compressor, while the 175 kg weight ensures stability on the worktop without vibration during operation.
The 40 L capacity allows batches of 2.6 to 7.5 L of custard cream per cycle, with each cycle lasting between 3 and 15 minutes plus the 55-minute pasteurisation and cooling time. The 600 mm width, 850 mm depth and 1335 mm height fit into a standard worktop space, leaving room for ingredient preparation alongside.
Cleaning follows each use: the bowl and mixer are removed for washing, while the heating and cooling coils are flushed with water and sanitised according to the manufacturer's schedule. The insulated jacket and outer casing are wiped down with a damp cloth to remove spills and condensation.
