A bain marie thermic trolley keeps prepared dishes at serving temperature without drying or scorching. The well holds water heated by submerged electric elements, creating a gentle, even heat around the gastronorm containers. This indirect heating method prevents hot spots and maintains moisture, making it suitable for sauces, soups and delicate dishes that must stay warm for extended service periods.

The operator fills the well with water to the marked level, then fits the gastronorm pans into the slots. The mechanical thermostat is set between +30 °C and +90 °C, and the unit is switched on. An indicator light confirms the heating cycle. Once the water reaches the chosen temperature, the immersion heaters cycle on and off to maintain it. The lid-holder keeps lids clear of the worktop while a condensed-steam tray collects drips, reducing spills during service.

The trolley is built from AISI 304 stainless steel, including the double-walled well and the outer structure. Four non-marking bumpers protect surfaces during movement, and two castors with brakes allow the unit to be positioned and secured. A drain cock at the base simplifies water changes and cleaning.

The 1.5 kW power rating indicates the load on a standard 230 V single-phase circuit, typical for professional kitchens. The 26 kg weight allows one person to move the trolley when empty, while the 840 mm width and 673 mm depth fit through standard kitchen doorways and alongside worktops. The 2 GN 1/1 capacity holds two full-size gastronorm containers, each 530 mm long and 200 mm deep.

Cleaning involves draining the well through the cock, wiping down the stainless steel surfaces with a damp cloth and mild detergent, and rinsing the condensed-steam tray. The immersion heaters and thermostat require no regular maintenance beyond keeping the well free of scale.

Optional dividers adapt the trolley for smaller gastronorm containers: DIST/G for 1 GN 1/1 (530 mm) and DIST/M for 1 GN 1/2 (324 mm). A UK-type G plug is available as an additional option.
