A halogen bridge delivers intense, radiant heat directly onto food without preheating, using infrared lamps that convert electrical energy into heat the moment they are switched on. The lamps sit above the work surface, directing warmth downward so that dishes placed beneath receive even coverage across their entire area. This method keeps food warm without drying it out, as the heat penetrates only the surface layer, preserving moisture and texture while maintaining serving temperature.
The ROCAM HALO 3 halogen bridge is operated by placing plates or trays of food beneath the three lamps. The operator switches the unit on, and the lamps illuminate instantly, emitting heat. A sneezeguard in Plexiglas® surrounds the lamps, shielding the food from airborne particles while allowing clear visibility. The top of the splashboard doubles as a shelf, providing a convenient space to pass plates through without interrupting the heat flow. Once the food is ready to serve, the operator switches the unit off, and the lamps cool rapidly, allowing quick turnover between batches.
Constructed from AISI 304 stainless steel, the HALO 3 is built for durability and hygiene in professional kitchens. The sneezeguards are made of Plexiglas®, which is easy to clean and resistant to cracking. A spiral cable connects the unit to the power supply, providing flexibility in placement while maintaining a tidy workspace.
The controls consist of a single operating lighting switch, which turns all three lamps on or off simultaneously. This simplicity ensures quick and reliable operation during service.
With a capacity of 3 GN 1/1, the HALO 3 accommodates standard gastronorm trays, making it suitable for holding multiple dishes at once. Its footprint of 1196 mm in length, 527 mm in width, and 464 mm in height allows it to fit on most worktops without occupying excessive space. The unit operates on a 230 V supply, compatible with standard UK electrical circuits, and draws 0.69 kW, ensuring it does not overload kitchen power systems.
Cleaning the HALO 3 involves wiping down the stainless steel surfaces and Plexiglas® sneezeguards with a damp cloth and mild detergent. The lamps should be allowed to cool before cleaning, and care should be taken to avoid scratching the Plexiglas®. The unit's design minimises crevices where food particles can accumulate, simplifying maintenance.
An optional white infrared lamp can be added to the HALO 3 for specific heating requirements, allowing customisation to suit different kitchen needs.
