A carving station keeps meat at serving temperature while an infrared lamp shines focused heat from above, preventing the surface from drying out. The warming plate beneath holds the platter at a steady temperature so each slice stays tender and juices do not congeal. The infrared element does not heat the air; it radiates directly onto the food, so the meat stays moist and the crust remains crisp without further cooking. A mechanical thermostat adjusts the plate temperature between warm and hot, while the lamp is switched on only when needed, giving the operator full control over the final texture of the carving.
The operator places the joint on the GN 1/1 warming plate, sets the thermostat to the desired temperature and switches on the plate. When the indicator light shows the plate is ready, the infrared lamp is turned on above the meat. The acrylic glass sneezeguard protects the food from airborne particles while allowing clear visibility. After carving, the plate keeps the remaining meat warm until service is complete.
The unit is built from AISI 304 stainless steel with a chromed finish. The infrared lamp is mounted on a ball joint so it can be angled precisely over the meat, and the lampshade follows the modern P2 design. A mechanical thermostat controls the warming plate, and a separate switch operates the lamp. An indicator light shows when the plate is heating.
The 1 kW power rating means the station draws a modest load on a standard 230 V circuit, suitable for most professional kitchens. The 540×447 mm footprint fits a GN 1/1 gastronorm tray, matching standard worktop layouts. At 17 kg, the unit is light enough to move with two people but stable once positioned. The chromed finish resists fingerprints and keeps the station looking clean during service.
Cleaning is straightforward: the stainless steel and chromed surfaces wipe down with a damp cloth, and the acrylic sneezeguard can be removed for thorough washing. The infrared lamp and warming plate are switched off and allowed to cool before cleaning.
Optional accessories include porcelain stoneware coverings for the hot plate in either lava or oxide finish, and a red infrared lamp can be fitted instead of the standard white one. A UK plug is available as an extra.
