A carving station that keeps roasts and joints at serving temperature without drying them out uses infrared radiation from two lamps to transfer heat directly to the surface of the food. The lamps emit invisible infrared waves that penetrate only a few millimetres, so the meat stays moist inside while the outside remains warm and ready to slice. A warming plate beneath the carving area adds gentle conductive heat from below, creating an even temperature across the entire GN 2/1 tray without the hot spots of a traditional bain-marie or the drying effect of a convection oven.
The operator places the cooked joint on the stainless-steel warming plate, switches on the infrared lamps with their independent switches, and sets the mechanical thermostat between +30 °C and +90 °C. An indicator light confirms the plate is heating. The acrylic glass sneezeguard keeps the workspace hygienic and protects the food from airborne particles while allowing full visibility. When the joint is carved, the lamps and plate can be left on to hold the next tray at temperature or switched off individually.
The unit is constructed from AISI 304 stainless steel for the frame and warming plate, with chromed lamp shades for durability and easy cleaning. The infrared lamps are available in white or red; the warming plate can be specified in stainless steel, lava or oxide finish. Each lamp has its own on-off switch, and the mechanical thermostat controls the warming plate temperature with a simple rotary knob.
A power rating of 1.25 kW indicates the load on the electrical circuit; the unit runs on a standard 230 V single-phase supply found in most professional kitchens. The footprint of 660 mm by 621 mm fits a standard worktop or mobile carving trolley, while the 750 mm height allows staff to work comfortably without bending. At 22 kg the unit can be moved by two people or lifted with a trolley, and the packing size of 120 mm by 80 mm by 115 mm simplifies storage and delivery.
Cleaning involves wiping the stainless-steel surfaces with a damp cloth and mild detergent, removing the acrylic sneezeguard for thorough washing, and dusting the lamp shades. The chromed finish resists fingerprints and smudges, and the smooth surfaces prevent food debris from sticking.
Optional accessories include porcelain stoneware covers in GN 1/1 size for the warming plate in either lava or oxide finish, and a UK plug can be fitted at additional cost. The red infrared lamp variant is also available as an optional upgrade.
