A continuous cast iron plate transfers heat evenly across its surface, storing thermal energy like a heavy frying pan but on a professional scale. Two Incoloy heating elements beneath the plate raise the temperature steadily, eliminating cold spots so every portion cooks at the same rate. The plate's mass smooths out fluctuations, giving consistent results whether searing steaks or holding burgers at serving temperature.
The operator preheats the griddle for fifteen to twenty minutes until the entire 600 mm width reaches the set point. Each half of the plate is controlled independently, allowing one side to run at a high sear temperature while the other side simmers vegetables or keeps finished items warm. Food is placed directly on the cast iron; juices and fat drain into a removable stainless steel drawer positioned below. After service the drawer is lifted out and washed in the dishwasher, while the still-hot plate can be cooled quickly with cold water or ice cubes once the griddle is switched off.
The PSF600E is built around a 600 × 400 mm cast iron cooking surface. Two 3 kW Incoloy elements heat the plate, drawing 230 V single-phase power. The unit measures 600 mm wide, 475 mm deep and 230 mm high, and weighs 33 kg. A stainless steel drip tray collects runoff and is dishwasher-safe. Independent thermostats for each half of the plate allow separate temperature settings up to 300 °C.
A 6 kW load requires its own dedicated circuit in a professional kitchen, ensuring the griddle can reach and hold high temperatures without tripping breakers. The 33 kg weight means the unit is moved on a trolley or carried by two staff. The 600 mm width accommodates multiple items side by side, while the 400 mm depth gives enough room for turning and flipping without spillage. The 230 V connection matches standard UK commercial outlets, so no special wiring is needed beyond the dedicated circuit.
After each service the drip tray is removed and cleaned in the dishwasher. The cast iron plate is wiped down once cooled, and the exterior stainless steel housing is wiped with a damp cloth. The heating elements are protected beneath the plate and require no routine maintenance beyond keeping the plate itself clean to prevent carbon build-up.
