A hot display case with bain-maries keeps prepared dishes at serving temperature while presenting them to customers through tempered glass. The bain-marie principle circulates warm water or steam beneath the food containers, distributing gentle, even heat that prevents drying or scorching. This method maintains moisture and texture in sauces, soups and plated meals, making it essential for buffets, delicatessens and self-service counters where dishes must stay ready for hours.
The MAXISELF CMX2E is designed for both self-service and double-sided operation, with front and rear openings that allow customers to serve themselves or staff to assist from either side. Two gastronorm GN1/1 containers sit in the heated wells, each holding 65 mm of depth for shallow or deep dishes. The operator loads the containers, sets the thermostat to maintain the internal temperature, and monitors the display through the glass panels. A removable top glass shelf adjusts the interior space for taller items or simplifies cleaning.
Built from AISI 304 stainless steel and tempered glass, the unit resists corrosion and withstands daily cleaning chemicals. The compact motor compartment sits beneath the worktop, leaving the footprint at 690 mm wide, 650 mm deep and 320 mm high. A drainage system collects condensation and spillage, directing it to a single outlet for quick removal.
The single control adjusts the temperature to the set point, ensuring the bain-marie water stays at the required heat level. The 230 V connection plugs into a standard single-phase circuit, suitable for most commercial kitchens. The 1210 W power rating reflects the load on the supply when the heating element cycles to maintain temperature.
Cleaning involves removing the GN containers and top shelf, wiping down the stainless steel surfaces, and rinsing the drainage channel. The tempered glass panels lift away for thorough sanitising, while the motor compartment remains sealed to protect internal components.
