This professional refrigerated display case is built for presenting sushi, cold appetisers and similar foods attractively while keeping them chilled. Static cooling circulates cold air naturally from an upper evaporator, avoiding the drying effect of forced-air systems. This approach preserves humidity around delicate items, preventing dehydration and maintaining texture and flavour. The evaporator coils are positioned above the food zone, allowing cold air to descend gently and create an even temperature across every shelf without disrupting the presentation.
The unit accommodates up to six GN 1/3x40 gastronorm trays on its stainless-steel tank floor. Tempered folding glass doors open outward, providing full access to the trays without needing to remove them. A separate steel shelf above the tank offers a second temperature zone, slightly warmer, suitable for items requiring less intense chilling. The Sayl-Blue digital thermostat allows precise temperature control between +2 °C and +6 °C for the main compartment; the shelf stabilises between +8 °C and +12 °C. Once the doors are closed, the static evaporator cools the air, and LED lighting activates, illuminating the contents without generating heat. The doors remain closed during service to maintain temperature stability, while the flat top surface serves as a worktop for plating or displaying additional dishes.
Constructed from deep-drawn AISI 304 stainless steel, the case features a seamless tank without sharp corners or welds that could trap food debris. Tempered glass doors fold back against the sides, secured by concealed hinges. High-power LEDs are mounted along the front edge, casting cold light across the trays. An automatic water-collection tray beneath the evaporator channels condensation away, preventing drips onto food or the floor. The refrigerant used is R600a, selected for its low environmental impact and efficient cooling in climate class 3 environments.
The 230 V single-phase connection draws power for cooling, lighting and controls. The 1320 mm width fits standard counter runs, while the 395 mm depth allows space for service behind the unit. At 340 mm high, the case is positioned at eye level for seated customers, enhancing visibility. The cooling system maintains the stated temperature range in typical professional kitchen conditions.
Cleaning involves wiping the stainless-steel tank and shelf with a damp cloth and mild detergent, then drying to prevent water spots. The glass doors should be cleaned with glass cleaner, avoiding abrasives that could scratch the tempered surface. The automatic water-collection tray should be removed and emptied regularly to prevent overflow. LED lighting requires no maintenance beyond occasional dusting. The static evaporator coils should be brushed annually to remove dust build-up, ensuring efficient operation.
