A batch freezer churns a liquid mix into gelato, ice cream or sorbet by freezing it while beating air into it. The beater, or dasher, turns inside a refrigerated cylinder. As the mix chills, the dasher scrapes the frozen layer from the cylinder wall and folds it back into the centre, creating a smooth, creamy texture. Without this constant motion the mix would freeze into a solid block; the dasher ensures even temperature and consistent overrun, the air that gives ice cream its lightness.
The operator pours the prepared mix into the cylinder through a lid at the top. A front control panel sets the freezing time and dasher speed; icons guide the user through the programme. Once the cycle starts, the machine cools the cylinder and the dasher begins to turn. When the lid is opened the dasher stops automatically, triggered by a certified safety switch. At the end of the cycle the operator lifts the lid and scoops the finished product from the cylinder, or transfers it to a holding freezer.
The BFE1000 W is built on a stainless-steel frame that holds the refrigeration unit, the dasher motor and the water-cooling circuit. All parts that touch the mix—cylinder, dasher, lid and gaskets—are made of stainless steel or non-toxic material. A shelf above the cylinder is adjustable in height and depth to fit different containers, from small tubs to large gastronorm pans.
A 400 V three-phase supply powers the compressor and the dasher motor, matching the standard circuit in professional kitchens. The 320 kg weight requires a stable floor and a trolley for moving the unit into place. The footprint of 600 mm by 836 mm fits a worktop or a floor space between other equipment.
The water-cooled condenser uses large copper coils to transfer heat efficiently, reducing water consumption. All parts that touch the mix or the refrigerant are accessible and removable for cleaning. The cylinder and dasher are lifted out, the shelf is unclipped, and the condenser coils are flushed with water to remove scale.
The BFE1000 W completes a 4 to 14 litre batch in one cycle and can produce up to 100 litres of ice cream per hour. The cooling method is selectable: water, air or combined air-water, allowing the unit to adapt to different kitchen environments.
