A batch freezer transforms liquid mix into gelato, ice cream or sorbet by churning it while removing heat. The BFE600 A draws the mix into a stainless-steel cylinder where a rotating dasher scrapes the frozen layer from the inner wall and folds it back into the centre. This constant motion incorporates air, creating the smooth texture and light body expected in professional frozen desserts. Heat is extracted through a refrigeration circuit that circulates refrigerant around the cylinder; the choice of air, water or combined cooling determines how quickly the unit sheds that heat to the surroundings.
To begin a cycle, the operator pours the prepared mix into the cylinder up to the marked level, selects the desired consistency on the front panel and starts the machine. The dasher turns, the refrigerant pump engages and the temperature drops steadily. A transparent lid lets staff monitor progress without opening; if the lid is lifted, a safety interlock stops the dasher immediately. Once the set texture is reached, the machine signals completion. The operator then draws off the finished product through a tap at the front, filling tubs or display containers placed on the adjustable-height shelf below.
Construction centres on a stainless-steel cylinder and dasher, both removable for cleaning. The front control panel carries toggle switches and illuminated icons that show the selected programme and current status. A large copper heat-exchanger coil minimises water use when the air-cooling variant is chosen. The entire unit stands on four castors for easy repositioning within the kitchen.
