A batch freezer transforms liquid mix into ice cream by rapidly freezing and incorporating air while mixing. The vertical tank holds the mix, and a refrigeration system chills the walls. A rotating rasp blade scrapes the frozen layer from the walls, aerating the product and preventing ice crystals. This continuous scraping and mixing create a smooth, creamy texture without manual intervention, allowing consistent results across every batch.

To operate the BFX1000, the operator pours the prepared mix into the vertical tank through the double lid. The lid can remain open while the mixer runs, enabling ingredients to be added mid-cycle. The operator selects a programme from the graphic display, which offers over fifty pre-set options tailored to different recipes. The machine starts, and the refrigeration system cools the tank while the rasp blade rotates, scraping and aerating the mix. Throughout the cycle, the vertical tank allows the operator to monitor the mixing process. Once the batch reaches the desired consistency, the machine signals completion, and the operator removes the finished ice cream.

The BFX1000 is constructed with a stainless steel exterior and interior, including all parts in contact with food. The mixer features a long-lasting polyethylene rasp blade, and rounded corners enhance safety during operation. The unit measures 600 mm wide, 936 mm deep and 1335 mm high, occupying a compact footprint on the worktop. At 320 kg, it requires a stable floor and may need two people or a trolley for positioning. The 400 V electrical supply demands a three-phase circuit, standard in professional kitchens but requiring verification before installation.

Controls include a graphic display for programme selection and monitoring, acoustic and visual indicators for malfunctions, and a PC connection port for configuring board parameters. The inverter and electronics are fully integrated, simplifying maintenance and reducing the risk of electrical interference.

The 100 litre per hour capacity allows continuous production, while the 5 to 14 litre range per cycle accommodates small and large batches. Water cooling, included in the BFX1000 W model, removes heat efficiently without additional fans, keeping the workspace quieter and cooler than air-cooled alternatives.

Cleaning involves removing all food-contact parts, which are designed for easy access. The stainless steel surfaces and polyethylene blade can be washed and sanitised separately, ensuring compliance with hygiene standards. The double lid and vertical tank simplify interior access, reducing downtime between batches.

The BFX1000 is available with air cooling or combined air-water cooling as optional variants, each affecting the cooling method and cost. The water-cooled model remains the standard configuration for this article.
