Electromechanical ice cream maker with automatic extraction
- : STAFF Ice system 1959
- Article number: BFX600
An electronic batch freezer chills and aerates a liquid mix into ice cream by circulating it against a refrigerated vertical cylinder. The rasp blade scrapes the frozen layer from the wall, folding air into the mix to create the smooth, creamy texture. This continuous scraping and mixing prevents large ice crystals and gives the finished product its characteristic body without manual stirring.
The BFX600 begins each cycle by loading the mix through the double lid while the mixer runs. The operator selects a programme from the graphic display, setting the freezing time and overrun. Once started, the inverter-driven motor powers the polyethylene rasp blade inside the stainless-steel tank. The vertical design lets the operator watch the mix thicken and lighten throughout the cycle. When the set time elapses, the machine signals completion and the finished batch is drawn off through the tap.
Construction centres on a food-grade stainless-steel tank with rounded corners for safety. The rasp blade and all parts touching the mix are removable for cleaning. An air-cooled refrigeration circuit removes heat from the cylinder, while the inverter and integrated electronics regulate speed and temperature. Acoustic and visual alarms alert the operator to any malfunction, and a PC port allows remote adjustment of board parameters.
The 400 V three-phase supply matches the circuit used in professional kitchens, avoiding the need for a separate transformer. At 207 kg the unit is moved on a trolley but remains stable on the worktop once positioned. The 600 × 836 × 1335 mm footprint fits against a wall or between other equipment without overhang.
Cleaning follows each production run: the tank, lid, rasp blade and tap are detached, washed and sanitised. The air-cooling fins require periodic dusting to maintain efficiency. Over fifty pre-set programmes cover gelato, sorbet and soft-serve recipes, allowing quick changeovers between products.
The BFX600 is offered in air-cooled configuration as article BFX00 A. Other cooling options—water and air-water—are available under separate articles. It is catalogued under professional ice-cream equipment for gelaterias, patisseries and catering kitchens.
