A combined batch freezer for gelato, sorbets and pasteurised mixtures, the STAFF Ice System 1959 RHS15/100 divides production between two independent stainless-steel tanks. The upper tank heats and pasteurises the base mixture while the lower tank freezes it into finished product, allowing continuous workflow without cross-contamination. Each tank is cooled by its own compressor and inverter, so both processes run simultaneously: pasteurisation above, freezing below.
The principle is thermal separation with mechanical agitation. In the upper tank, a mixer with polyethylene scrapers circulates the liquid while electric elements raise its temperature to pasteurisation levels. The scrapers prevent scorching by constantly renewing the layer in contact with the heated walls. Once pasteurised, the mixture is either held at maturation temperature or transferred through an external channel into the lower tank. There, a second mixer with self-adjusting POM scrapers churns the liquid while the compressor lowers the temperature, incorporating air to create the smooth texture of gelato or sorbet. The torque of each mixer is controlled by an algorithm that adjusts speed and power to match the viscosity of the product, ensuring consistent results across different recipes.
Operation begins by loading the upper tank with the base mixture. The operator selects one of 61 preset programmes or sets parameters manually. Pasteurisation programmes heat the mixture to 85 °C for high pasteurisation or 65 °C for low, hold it for the required time, then cool it to 4 °C for maturation. Freezing programmes in the lower tank run by time or temperature, with seven dedicated to controlling the density of the finished product. During operation, the transparent covers allow visual monitoring of the mixture's transformation, while the double lids permit adding ingredients without stopping the cycle. Once the cycle completes, an acoustic signal alerts the operator, and the product is dispensed through a tap flush with the bottom of each tank.
Construction is stainless steel for the tanks and mixers, with polyethylene and POM scrapers designed to last through repeated thermal cycles. Direct-drive transmissions with lifetime-lubricated gearboxes eliminate belts, reducing vibration and maintenance. Each tank has its own defrost switch for quick restart after cleaning. The control panel features a 2.5-inch multilingual display showing cycle progress, mixer speed, and temperature, with PID control for precise thermal regulation. Acoustic and visual alarms indicate malfunctions, and the system saves all pasteurisation and maturation cycles for future reference.
The 400 V three-phase supply powers both compressors and mixers, suitable for commercial kitchen circuits. At 420 kg and 600 mm wide, the unit requires floor mounting and a fixed position near drainage. The 100 L/h capacity refers to the maximum output when both tanks operate in sequence, while the 3–14 L continuation range indicates the volume the lower tank can process in a single freezing cycle. The footprint of 600 by 830 mm allows placement against a wall or between other worktop equipment.
Cleaning involves flushing the tanks with water and detergent, then running the mixing programme to circulate the solution. The removable transfer channel and flush-mounted taps simplify access, while the defrost switches allow the tanks to return to room temperature quickly. The transparent covers and double lids are removed for thorough scrubbing, and the scrapers are designed to be replaced without tools. The control panel is wiped with a damp cloth, avoiding direct water contact.
