A combined digital batch freezer that pasteurises, matures and freezes in two independent stainless-steel tanks. The upper tank heats and holds mixtures at controlled temperatures for pasteurisation or thermal shock, while the lower tank churns and freezes them into gelato, sorbets or ice cream. Both tanks run simultaneously, cutting production time and allowing continuous workflow in a professional kitchen or gelateria. The process starts with heat. In the upper tank, a heating element raises the mixture to pasteurisation temperatures, killing bacteria and enzymes. A built-in PID controller keeps the temperature steady, while an inverter-driven mixer circulates the liquid evenly, preventing hot spots and ensuring uniform texture. After heating, the mixture can be held at a set temperature for maturation, or transferred directly to the lower tank via an external channel. The transparent cover lets the operator monitor the transformation at every stage, and a double lid allows ingredients to be added mid-cycle without stopping the machine. In the lower tank, a refrigeration compressor rapidly cools the mixture while a second mixer churns it. The mixer's speed is adjustable, letting the operator control the density and texture of the finished product—from soft-serve to firm gelato. Durable polyethylene scrapers continuously clean the tank walls, preventing ice build-up and ensuring consistent freezing. A defrost switch allows quick restart between batches, and the tank's faucet sits flush with the bottom for complete drainage. Operation is fully programmable. An onboard computer offers 61 preset cycles, including pasteurisation, freezing, mixing and circuit programmes that combine multiple steps. Each cycle can be adjusted manually, with changes saved for future use. The display shows real-time progress, and acoustic signals alert the operator when a cycle completes. In the event of a power outage, the machine resumes automatically, preserving the batch and the programme settings. The RHS15/60 is built for durability and ease of use. Both tanks feature direct-drive mixers with lifetime-lubricated gearboxes, eliminating belts and reducing maintenance. The agitator shafts are sealed to prevent leaks, and the scrapers self-adjust to maintain contact with the tank walls. The machine's 600 mm width and 830 mm depth fit standard worktops, while its 345 kg weight requires a stable floor and a three-phase 400 V supply. The 60 L/h capacity allows continuous production, with each cycle yielding up to 10 litres of finished product.
