A boning knife separates meat from bone with a narrow, flexible blade that follows the contours of joints and cartilage. The thin profile reduces resistance, letting the blade slide along the bone without tearing the meat. A shorter blade gives greater control around small or intricate cuts, while the pointed tip reaches into tight spaces where a wider knife would jam.
The operator holds the handle in a firm grip, guiding the blade with small, precise strokes. The flexibility of the steel allows the edge to bend slightly, matching the curve of the bone rather than forcing a straight path. This keeps the cut close to the bone, maximising the yield of usable meat and minimising waste. The blue handle provides visual contrast against raw meat, making the knife easier to locate on a busy worktop.
The blade is made of stainless steel, resisting corrosion from meat acids and frequent washing. The entire knife can be washed in a commercial dishwasher, which meets HACCP hygiene standards for professional kitchens. The 160 mm overall length balances reach and manoeuvrability, allowing the knife to work around poultry, fish or small joints without becoming unwieldy.
Cleaning follows from the materials: stainless steel tolerates high-temperature wash cycles and chemical sanitisers, while the dishwasher-safe construction removes the need for hand scrubbing between uses. The HACCP note confirms the knife is designed for food-contact surfaces and can be integrated into a kitchen's hygiene programme without additional validation.
