Stalgast 200 mm Kitchen Knife with Black Handle

A kitchen knife of this length is designed to slice, chop and dice with a single draw. The blade runs the full length of the cut, so each stroke divides food cleanly without sawing. The weight of the knife does the work; the cook guides it, reducing fatigue during long service periods.

The blade is forged from a single piece of steel, then ground to a fine edge. Hardness between 52 and 54 HRC keeps the edge sharp through repeated use, while the steel remains tough enough to resist chipping when it meets bone or frozen food. A black handle is fitted to the tang, giving a secure grip even when hands are wet or greasy.

To use the knife, the cook holds the handle in the dominant hand and rests the blade's spine on the knuckles of the guiding hand. The tip stays on the board while the heel lifts and lowers, creating a smooth rocking motion. Food is cut in a single pass, then pushed aside with the side of the blade or the knuckles.

The knife measures 200 mm from tip to handle. This length balances control and reach: long enough to slice large vegetables or portion fish, short enough to manoeuvre around smaller items without overbalancing. The blade hardness of 52-54 HRC means the edge will hold its geometry through regular honing, but will still respond to a steel or stone when it eventually dulls.

Cleaning follows from the materials: wash the blade by hand in warm water with a mild detergent, dry immediately to prevent corrosion, and store in a knife block or on a magnetic strip to protect the edge. The black handle is non-porous and can be wiped with a sanitiser between tasks.
