A kitchen knife cuts by concentrating force along a sharpened edge. The blade's taper turns downward pressure into a slicing motion, separating food without crushing. A longer blade, such as this 25 cm model, allows a single stroke to cover more surface, reducing the number of cuts needed for large items like joints, melons or dense vegetables.
The operator holds the handle in a firm grip, aligning the blade with the intended cut. Pressure is applied evenly along the length, letting the edge do the work rather than forcing the tip. For safety and consistency, the food is placed on a stable cutting board and the free hand guides the item with fingers curled under, away from the path of the blade.
This Stalgast knife is a single piece of stainless steel, ground to a fine edge and polished to resist corrosion. The red handle is moulded directly onto the tang, eliminating gaps where food particles could lodge. The colour coding follows HACCP protocols, marking the knife for a designated hygiene zone within the kitchen.
The 250 mm overall length provides reach for bulk prep while keeping the knife manageable on a busy worktop. The weight of the steel gives momentum to each stroke, reducing operator fatigue during extended use.
Cleaning is carried out by hand after each service. The blade is washed in warm water with detergent, rinsed and dried immediately to prevent water spots.
