An induction cooktop transfers energy directly into the base of a ferromagnetic pot or pan, heating the food without heating the surface beneath. A high-frequency electromagnetic field induces eddy currents in the metal, turning the pot itself into the heating element. This method eliminates wasted heat, speeds up response and gives the operator precise control over the cooking temperature as soon as the pot is placed on the ceramic plate.
The sequence starts by placing a compatible pot on the marked zone. The pot-detection system senses the metal and activates the field; no power flows until the pot is in place. The operator turns the ergonomic knob to one of eleven power levels, setting the intensity of the field and thus the rate at which the pot heats. A digital display shows the selected level and the current state of the cooktop. When the pot is removed, the field shuts off automatically, leaving the ceramic plate cool enough to touch within seconds. Adjustable feet allow the unit to be levelled on uneven worktops.
The ceramic plate is a single, very robust sheet that resists thermal shock and mechanical impact. Beneath it, an efficient cooling system keeps the electronics at a safe operating temperature even during prolonged high-power use. The cooktop is built to a footprint of 556 mm wide, 582 mm deep and 434 mm high, fitting standard worktop cut-outs and leaving space for adjacent equipment. The 8 kW power rating requires a 400 V three-phase supply, the standard circuit in professional kitchens for high-demand appliances.
The minimum pot-bottom diameter of 16 cm ensures the field is concentrated over a sufficient area; smaller pots will not trigger the detection system. The maximum load of 50 kg allows heavy stockpots and braising pans to be used without risk of damaging the ceramic plate or the internal components.
Cleaning is straightforward: the smooth ceramic surface can be wiped down with a damp cloth once it has cooled. The cooling system vents should be kept clear of dust and grease to maintain airflow. The knobs and display are sealed against moisture and can be cleaned with a mild detergent.
