A cheese knife designed to cut through large wheels and blocks without crushing or sticking. The blade runs the full 360 mm length, allowing a single draw to slice through even dense, aged cheeses. Two handles—one at each end—give the operator balanced control: one hand guides the start of the cut, the other steadies the finish, reducing the risk of uneven slices or slips.
The blade is ground from a single piece of high-carbon steel, hardened to 54-56 HRC. This hardness keeps the edge sharp through repeated use, while the smooth, uncoated surface minimises drag as the knife passes through the cheese. A slight flex in the blade helps it follow the curve of a wheel without forcing the cut, so the slice stays intact rather than breaking or crumbling.
Each handle is moulded from two types of plastic: a rigid core for strength and a softer outer layer for grip. The handles are set low, close to the blade, to keep the cutting force close to the edge and reduce wrist strain during long service.
