A chopper is a heavy-duty knife designed to cut through bone, cartilage and dense meat with a single downward stroke. The broad, thick blade concentrates force on the cutting edge, allowing the operator to split joints and trim large cuts without sawing. This method reduces fatigue and speeds up butchery tasks in professional kitchens.
The Stalgast Chopper 16 cm uses a Sanelli blade made in Italy, ground to a hardness of 54-56 HRC. This balance of toughness and edge retention keeps the blade sharp through repeated use on hard materials. The handle combines two types of plastic: a rigid core for strength and a softer outer layer that cushions the hand during impact. The shape is standardised to fit any grip, whether the user is right-handed, left-handed or wearing gloves.
To use, place the food on a stable chopping board. Align the blade over the target area, raise the knife to chest height and bring it down with controlled force. The weight of the chopper does most of the work; the operator guides the cut and repeats as needed. After use, wash the blade by hand in warm water with mild detergent, dry immediately and store in a knife block or magnetic strip to protect the edge.
The 160 mm overall length gives enough reach for most butchery tasks while keeping the tool compact enough for worktop storage. The hardness specification of 54-56 HRC means the blade will hold an edge longer than softer knives, reducing the frequency of sharpening in a busy kitchen.
This chopper is part of the Stalgast professional cutlery range, positioned for butchery and meat preparation in catering environments.
