An electric knife sharpener that uses a diamond abrasive wheel to restore edges without water. The wheel spins at speed, grinding a precise bevel into the blade while the housing collects the filings. Because the process is dry, there is no need to rinse or dry the knife afterwards, and the steel does not overheat or lose temper.
The operator places the knife in the guide, which holds the blade at a fixed 28° angle. A single switch starts the motor; the wheel turns at 6600 revolutions per minute, drawing the blade across the diamond surface in one smooth pass. The guide ensures the same angle every time, so each knife in the kitchen receives an identical edge. Ceramic knives, which are brittle and prone to chipping, are sharpened safely because the diamond wheel removes material gradually and without impact.
The unit is built as a small worktop appliance. The body is formed from moulded plastic, and the sharpening wheel is a bonded diamond abrasive. A transparent cover over the wheel lets the operator watch the process without risk of contact. The housing is shaped to collect the filings, which can be emptied after use.
A single rocker switch controls power. The voltage requirement is 230 V, the standard single-phase supply found in professional kitchens.
The sharpening angle of 28° is set by the guide and cannot be adjusted. This angle is suitable for most Western-style kitchen knives, producing an edge that balances sharpness and durability.
