An apple excavator removes the core and seeds from an apple in a single motion, leaving the fruit intact for stuffing, baking or presentation. The tool consists of a cylindrical blade sharpened at the edge, sized to match the core diameter. When pressed through the apple, the blade cuts a clean plug that contains the core, seeds and tough central fibres. The method avoids bruising the surrounding flesh and produces a uniform cavity, which is essential for professional dishes where appearance and portion control matter.
To use the excavator, place the apple on a stable surface. Align the blade over the stem end and press down firmly until the blade passes through the fruit. Lift the tool; the core remains inside the hollow blade. Tap the blade against a container to release the plug. The process is repeated for each apple, with no need for additional cutting or trimming.
The Stalgast excavator for 16 mm cores is constructed from stainless steel, ensuring durability and resistance to corrosion in a busy kitchen. The blade is fixed to a handle that provides a secure grip during use. The 16 mm size is chosen for standard dessert apples, allowing the tool to remove the core without excessive waste or leaving residual seeds.
Cleaning follows the construction: the stainless steel blade and handle are washed in hot water with detergent, rinsed and dried. The tool is small enough to fit in standard utensil baskets for dishwashers, though hand drying is recommended to maintain the edge sharpness.
The excavator is listed in the Stalgast catalogue under fruit preparation tools, alongside peelers, corers and melon ballers.
