A gas cooker built for continuous service in professional kitchens, where the hob must respond instantly to demand. Gas burners heat by direct flame: the moment the valve opens, the fuel ignites and transfers energy to the pan without waiting for elements to warm. The flame spreads across the base, giving even heat and quick recovery when cold ingredients are added. A pilot flame stays alight to ensure immediate ignition, while a safety device cuts the gas if the flame fails, preventing unburnt fuel from escaping.
The sequence starts with the adjustable feet: set them so the hob sits level on the worktop. The operator then selects the gas type—natural or propane—before connecting the supply. Once the pilot is lit, each burner can be turned on individually. The two largest burners are double-crown, meaning they have an inner and outer ring of flame that can be controlled separately. A reduction valve lowers the power to one-third for simmering, saving fuel and preventing scorching. The cast iron grids support heavy pots and distribute the heat evenly across the base, while a removable bowl beneath the burners catches spills and can be washed in a dishwasher.
Construction is a stainless steel frame with cast iron grids and adjustable feet. The burners are arranged in a single row: one 3.5 kW, one 5 kW and two 7 kW double-crown. Each burner has its own control knob, which adjusts the gas flow and thus the flame height. The pilot flame is lit separately and remains on whenever the appliance is in use.
The total power of 22.5 kW indicates the load on the gas supply; a commercial kitchen must ensure the pipework and regulator can deliver that flow without pressure drop. The 900 mm width matches standard worktop depths, allowing the cooker to sit flush with other equipment. The 850 mm height is chosen so that the hob surface is at a comfortable working level for chefs standing at the counter. Adjustable feet compensate for uneven floors, keeping the hob level and stable.
Cleaning follows from the removable parts: the dishwasher-safe bowl lifts out for washing, and the cast iron grids can be taken off to scrub away carbon deposits. The stainless steel surface around the burners wipes clean with a damp cloth. The flame safety device should be checked periodically to ensure it cuts the gas when the flame goes out.
