Gas fryer with a capacity of up to 17 liters
A gas fryer heats oil by burning gas beneath a vat, transferring energy directly to the oil. The cold zone at the bottom collects food debris, keeping the oil cleaner and extending its life. A thermostat cycles the burners to hold the set temperature, while a flame safety device shuts off the gas if the flame fails, preventing unburned gas from escaping.
The operator fills the 17 litre vat with oil, sets the temperature between 90 °C and 190 °C, and ignites the burners with a 230 V spark generator. Food is loaded into the basket, which measures 290 mm by 300 mm by 120 mm, and lowered into the oil. Once the timer signals the end of the cycle, the basket is lifted out and the oil drains back into the vat. Used oil can be released into a container with a built-in filter for disposal or reuse.
The fryer is built with a stainless steel body and adjustable feet for levelling on uneven floors. A pilot flame maintains ignition, and the temperature control allows precise adjustment within the 90-190 °C range. The 15 kW power rating requires a dedicated gas supply line capable of delivering the necessary flow rate for consistent performance.
The 400 mm width, 700 mm depth and 850 mm height fit standard worktop layouts, while the 17 litre capacity supports medium-volume frying. The cold zone system reduces oil degradation, lowering operating costs over time. The included oil container with filter simplifies oil changes and maintenance.
Cleaning involves draining the oil, removing the basket and wiping down the interior surfaces. The cold zone should be cleared of debris after each service to prevent build-up. The fryer is also available in gas versions G27 and G31 to match different supply pressures.
