A hot chafing dish keeps prepared food at serving temperature without further cooking. It uses a gentle, indirect heat source beneath gastronorm pans to maintain warmth evenly across the entire surface. The heat is distributed through a water bath or dry-heat element, preventing hot spots that could dry or scorch the food. This method preserves moisture, texture and flavour while allowing guests to serve themselves from a buffet line or display counter.
The operator loads up to four GN1/1 gastronorm pans into the stainless-steel wells, each separated by a removable divider. The unit is switched on and the thermostat set between +30 °C and +95 °C, depending on the dish. Once the target temperature is reached, the indicator confirms the chafing dish is ready. The pans remain in place until service ends, at which point they are lifted out and the unit switched off.
The body is constructed entirely of stainless steel, including the wells, frame and control panel. The 1570 mm width accommodates four GN1/1 pans side by side, while the 735 mm depth leaves room for serving utensils at the front. The 880 mm height matches standard worktop levels for comfortable access. A 3.2 kW heating element draws power from a 230 V single-phase supply, the standard circuit in professional kitchens.
The temperature range of +30 °C to +95 °C covers holding for most hot dishes, from delicate sauces to roasted meats. The 230 V voltage requirement means the unit plugs into a standard UK power outlet without additional wiring. The stainless-steel construction resists corrosion and allows easy sanitisation after each use. The removable separator simplifies cleaning between wells and prevents cross-contamination during service.
After use, the wells are emptied, wiped and sanitised. The separator and control panel are cleaned with a damp cloth and mild detergent. The stainless-steel surfaces are dried to prevent water spots and maintain appearance.
